The Best Marshmallow Peach Pie

What is Peach Pie?

Many peach pies feature peaches baked with a pastry crust. But, this recipe is extra delicious and creamy because it adds cool whip and marshmallows! This recipe is from my mother-in-law and was an annual family birthday tradition for my wife, Brooke growing up. One of the neat things about my in-laws is their annual “birthday meal” tradition, where the birthday person gets to choose what they’d like to have for dinner on their special day. Each year, the dessert of choice for Brooke was peach pie. My in-laws still host annual birthday dinners for my wife and her sisters. Now my wife and I carry on the tradition with our kids, and we’re looking forward to seeing what special desserts become our tradition.

Ingredients – Makes 1 Pie

  • Graham cracker crust (for homemade, or just use premade store bought)
  • 27 graham cracker squares (1 ½ cups), crushed
  • 1/3 cup sugar
  • 6 tbsp. salted butter, melted
  • 4-5 sliced, peeled ripe peaches
  • 33 large marshmallows
  • 1 tsp. vanilla
  • ¼ cup milk
  • 1 8 oz. Cool Whip

Step 1: Make Crust

  1. Preheat oven to 350°.
  2. Place graham crackers in a resealable bag, crush ‘til finely chopped (I use rolling pin).
  3. Melt butter in a bowl.
  4. Mix crushed graham crackers, sugar and melted butter in mixing bowl.
  5. Pour mixture into greased 9” pie dish. Press graham mixture on bottom of dish and along the sides. Make sure corners are spread evenly, they tend to be thicker in corners if you don’t pay attention.
  6. Bake crust for 8 minutes in 350° oven.

Step 2: Prep Pie Filling

  1. Peal peaches, cut into small squares, ¼-½ inch. Set aside.
  2. Over medium heat on stove top, melt marshmallows in a double broiler until gooey (no chunks) ~20-30 min. Stir periodically. For more info on how to double boil, here’s a link detailing how-to DIY Double Boil from The Food Network.
  3. Add vanilla & milk, cool to room temp.

Step 3: Put Pie Together

  1. Once melted marshmallows reach room temp, mix with Cool Whip and peaches.
  2. Scoop Cool Whip/peach filling into pie crust and refrigerate.
  3. Serve on special day.

Steps to go Full Dad Mode for success

  1. Make crust from scratch, it is way better than store bought. But, this adds time.
  2. FYI – Double boiling large marshmallows will take longer than you think, 20+ minutes depending on how well your double boiler situation works.
  3. Buy an extra peach or two in case one is bad when preparing. I didn’t know how to by peaches, some were too ripe or not ripe enough. When buying they should be not too hard or too soft. Here’s a good guide from the Spruce; Guide to Buying, Storing, and Cooking With Peaches
